2 Chicken Breasts

2 TB of lemon juice

1 TB Olive Oil

1 clove garlic, minced

1TB Fresh rosemary, if available (or 1 tsp dried)

Salt and pepper to taste

Instructions:

  1. In a small bowl, mix lemon juice, olive oil, garlic, roseary, salt, and pepper

  2. Marinate the chicken in this marinade for a least 15 minutes

  3. Grill or broil on medium heat until cooked through (about 6-7 miinutes per side)

  4. Serve with a side of vegetables or a green salad


    \Herbed Veggie Quinoa Bowl

    Packed with protein, fiber, and vitamins, this bowl is a quick way to enjoy the benefits of herbs in a nutrient -dense meal.

    Ingredients

    * 1 cup Quinoa

    *2 cups water or vegetable broth

    *1 TB Parsley, chopped

    *1 TB Basil, chopped

    *1 cup cherry tomatoes, halved

    *1/2 cup cucumber, diced

    *1 TB olive oil

    *Salt and pepper to taste

    Instructions:

    1. Rinse the quinoa, then cook in water or your broth according to package instructions.

    2. Once cooked, toss in a bowl with the other ingredients.

    3. Serve warm or chilled for a light, refreshing meal.



    Fresh Herb Omelet

    Ingredients:

    *2 large eggs

    *1 TB milk or water
