Here is a favorite Autumn Recipe we enjoy using our kitchen herbs.
Quick stir-fried rice
1 cup of your favorite Rice, I use Jasmine
1/2 cup chopped onion
1/2 green pepper, chopped
2 stalks of celery, chopped
4-5 baby carrots sliced thinly
1 bag of frozen stir fry veggies
1/4 cup fresh cilantro
1/4 cup fresh basil leaves
In a large skillet, saute in 1 tb of oil, the onion, carrots, and celery for about 3 min. Then add all the other veggies and stir fry for 5-8 min until veggies are crisp tender. Then add rice and cook for about 5 more minutes. Then add the spices and salt and pepper to taste. Serve warm with chicken breast and a side salad. You can experiment with this recipe and make it to your family's taste. Enjoy.
