Putting up pears

So I have a wonderful neighbor who has pear and apple trees. He is very generous nwith them. He gave me 2.5, 5 gallon buckets full of pears. Now they are not beautiful like the ones in the store, but they are naturally grown and so tasty. So with a little bit of effort on my part, I was able to put up several pints of pear butter (so good!) and a few quarts of diced pears. Those I can use to just eat or make cobbler, pie, or crisp around the holidays or on a cold winter night when you need some comfy food.

So for about 3 days, I waited for the pears to ripen. Then I peeled, cored, and sliced the pears into a large pot. I saved the peelings and stuff to feed to the chickens. I then boiled about 3 pounds of the pears on the stove for about an hour on low to medium heat stirring every 10 minutes. Then I added 1/2 cup of honey, and a generous amount of cinnamon, and about 1/2 cup of lime juice. You can use lemon juice, but we have an allergy to lemon in the house. I left this to simmer on the stove for about another 30 minutes, or until the pears are very soft. Using my immersion blender (this is the one I use if you want to check it out, https://amzn.to/4gHedgW), I blend all the pears until it is smooth. Then I reheat it and then put in pint jars or jelly jars. Wipe the rims of your jar and screw on the bands and flat lids. You can store in the frig, or following safety guidelines, water bath them in boiling water for 15 min.

Pear Butter is simple to make with just a few ingredients. It tastes so good. Once a jar is open, it does not last long at my house. I feel good about it because I know what is in my food.
