"Ripe for the Pickin': How to Make Homemade Spaghetti Sauce from Your Homegrown Tomatoes"

So it is that time of year that I Iove. So much to do, but it is a labor of love. Tomatoes are really starting to come on here in Missouri. I already shared our go to recipe for salsa. Well, I was reading some recipes that popped up on my Facebook page and came across an intriguing Spaghetti Sauce Recipe. It caught my interest because it was a general recipe (no measurements) of how she made spaghetti sauce. So using 10 pounds out of the 50 pounds of tomatoes I had, I made this Spaghetti Sauce. My 5 (almost 6) year old granddaughter helped. This girl is amazing in the fact that she loves to help her Yaya. So we put on some music (her choices) and she washed the tomatoes, helped me to cut them into pieces, and even helped ladle it into the jars. First time she has seen me use a canning funnel and was fascinated how easy it was to fill the jars. So I put in the ingredients, taste tested, added some more and the final product is delicious! Approved by my Granddaughter and my son (her dad). My husband said that this was a keeper and really hopes I can duplicate it. LOL I could tell you many amusing story about my Granddaughter and me making this sauce, but I will spare you. However, I will share the recipe as best as I can. So here it goes:
Remember, these are rough estimated amounts. Start with some and you can always add more along the way.
Started with 10 pounds of tomatoes, washed, cored, and quarter
1 very large onion, chopped
1 green Pepper
2 Tablespoons of minced garlic
2 small cans of tomato paste (optional)
3 teaspoons of basil and Rosemary (I used fresh)
1/3 cup sugar

Directions: Sauté onion, green pepper in a skillet for about 3 min or so until you can smell them and they begin to soften. Take off heat and put in a large pot aong with the tomatoes. Simmer for about 20 min. Then add all the other ingredients and cook over medium heat for 20 minutes stirring occasionally. By now your tomatoes should be mushy. Using an immersion blender, blend the sauce (careful it is extremely hot) until smooth. Taste, add any ingredients you need to and simmer for another 20-30 minutes, taste again. I had to add a touch more garlic, basil, and oregano. Oh, my, so good! I put it in hot sterile jars and canned it. Not sure how to do that? I hope you give this a sauce a try. It is worth the time and effort. My granddaughter and I enjoyed our time together singing to her songs, talking, and just being together as I pass on the skills that I learned from my Granny and Mom. :)
